  • Ground pork - 250 grams
  • Cooked quinoa - 50 grams
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Lemongrass - 1 stalk, finely chopped
  • Kaffir lime leaves - 3, finely chopped
  • Thai bird's eye chili - 2, minced
  • Fish sauce - 1 tablespoon
  • Coriander root - 1 tablespoon, minced
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Bamboo skewers - 4, soaked in water

Steps

  1. In a large mixing bowl, combine ground pork, cooked quinoa, minced garlic, chopped shallots, lemongrass, kaffir lime leaves, minced chili, fish sauce, coriander root, sugar, black pepper, and salt.
  2. Mix the ingredients thoroughly until well combined, using your hands for better mixing.
  3. Divide the mixture into 4 equal portions and shape each portion into a sausage around the soaked bamboo skewers.
  4. Preheat a grill or frying pan over medium heat and lightly oil the surface.
  5. Cook the skewers for about 15-20 minutes, turning occasionally, until the sausages are cooked through and browned on all sides.
  6. Remove from heat and let them rest for a few minutes before serving.
