- Ground pork - 250 grams
- Cooked quinoa - 50 grams
- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Lemongrass - 1 stalk, finely chopped
- Kaffir lime leaves - 3, finely chopped
- Thai bird's eye chili - 2, minced
- Fish sauce - 1 tablespoon
- Coriander root - 1 tablespoon, minced
- Sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Bamboo skewers - 4, soaked in water
Steps
- In a large mixing bowl, combine ground pork, cooked quinoa, minced garlic, chopped shallots, lemongrass, kaffir lime leaves, minced chili, fish sauce, coriander root, sugar, black pepper, and salt.
- Mix the ingredients thoroughly until well combined, using your hands for better mixing.
- Divide the mixture into 4 equal portions and shape each portion into a sausage around the soaked bamboo skewers.
- Preheat a grill or frying pan over medium heat and lightly oil the surface.
- Cook the skewers for about 15-20 minutes, turning occasionally, until the sausages are cooked through and browned on all sides.
- Remove from heat and let them rest for a few minutes before serving.
