- Ground pork - 300 grams
- Garlic, minced - 2 cloves

- Lemongrass, finely chopped - 1 stalk
- Kaffir lime leaves, finely chopped - 2 leaves
- Cilantro, chopped - 2 tablespoons
- Thai red curry paste - 1 tablespoon
- Fish sauce - 1 tablespoon
- Coconut flour - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Coconut oil - for cooking
- Lettuce leaves - for wrapping
- Sliced cucumbers - for serving
- Sliced tomatoes - for serving
Steps
- In a mixing bowl, combine ground pork, minced garlic, minced shallots, chopped lemongrass, chopped kaffir lime leaves, chopped cilantro, red curry paste, fish sauce, coconut flour, black pepper, and salt.
- Mix the ingredients thoroughly with your hands until well combined.
- Divide the mixture into 2 equal portions and form them into patties.
- Heat coconut oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side, or until they are fully cooked and browned.
- Once cooked, remove the patties from the skillet and let them rest for a couple of minutes.
- To serve, place each patty in a lettuce leaf, topping with sliced cucumbers and tomatoes. Wrap the lettuce around the patty and enjoy.
