Ingredients

  • Ground pork - 300 grams
  • Garlic - 4 cloves, minced

  • Lemongrass - 2 stalks, finely minced
  • Kaffir lime leaves - 4, finely shredded
  • Thai bird's eye chili - 2, minced (adjust for spice preference)
  • Fish sauce - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Egg - 1, beaten (for binding)
  • Olive oil - 1 tablespoon (for cooking)

Steps

  1. In a large bowl, combine the ground pork, minced garlic, chopped shallots, minced lemongrass, shredded kaffir lime leaves, minced bird's eye chili, fish sauce, chopped cilantro, chopped mint leaves, and beaten egg.
  2. Mix the ingredients thoroughly until well combined, using your hands if necessary.
  3. Form the mixture into oval-shaped sausages, about 10-12 cm long.
  4. Heat the olive oil in a skillet over medium heat.
  5. Cook the sausages in the skillet for about 4-5 minutes on each side or until they are browned and cooked through.
  6. Remove from heat and let them rest for a few minutes before serving.
