- Thai bird's eye chili - 2, minced (adjust for spice preference)
- Fish sauce - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Mint leaves - 2 tablespoons, chopped
- Egg - 1, beaten (for binding)
- Olive oil - 1 tablespoon (for cooking)
Steps
- In a large bowl, combine the ground pork, minced garlic, chopped shallots, minced lemongrass, shredded kaffir lime leaves, minced bird's eye chili, fish sauce, chopped cilantro, chopped mint leaves, and beaten egg.
- Mix the ingredients thoroughly until well combined, using your hands if necessary.
- Form the mixture into oval-shaped sausages, about 10-12 cm long.
- Heat the olive oil in a skillet over medium heat.
- Cook the sausages in the skillet for about 4-5 minutes on each side or until they are browned and cooked through.
- Remove from heat and let them rest for a few minutes before serving.
