Ingredients
- Sago pearls - 50 grams
- Coconut milk - 200 ml
- Water - 300 ml
- Palm sugar - 30 grams
- Salt - a pinch
- Fresh mango - 100 grams, diced
- Chia seeds - 1 tablespoon (optional for added fiber)
Steps
- In a medium saucepan, bring 300 ml of water to a boil.
- Add the sago pearls to the boiling water and stir to prevent sticking.
- Reduce the heat to medium and cook for about 15 minutes or until the sago pearls become translucent, stirring occasionally.
- Once cooked, remove the saucepan from heat and let the sago pearls sit for 5 minutes, covered.
- In another saucepan, combine the coconut milk, palm sugar, and a pinch of salt. Heat gently until the sugar dissolves, stirring occasionally.
- Drain the cooked sago pearls and add them to the coconut milk mixture. Stir well to combine.
- If using, add the chia seeds and mix thoroughly.
- Allow the mixture to cool slightly before serving.
- Spoon the sago pudding into serving bowls and top with diced fresh mango.
- Serve warm or chilled as desired.
