Ingredients

  • Sago pearls - 50 grams
  • Coconut milk - 200 ml
  • Water - 300 ml
  • Palm sugar - 30 grams
  • Salt - a pinch
  • Fresh mango - 100 grams, diced
  • Chia seeds - 1 tablespoon (optional for added fiber)

Steps

  1. In a medium saucepan, bring 300 ml of water to a boil.
  2. Add the sago pearls to the boiling water and stir to prevent sticking.
  3. Reduce the heat to medium and cook for about 15 minutes or until the sago pearls become translucent, stirring occasionally.
  4. Once cooked, remove the saucepan from heat and let the sago pearls sit for 5 minutes, covered.
  5. In another saucepan, combine the coconut milk, palm sugar, and a pinch of salt. Heat gently until the sugar dissolves, stirring occasionally.
  6. Drain the cooked sago pearls and add them to the coconut milk mixture. Stir well to combine.
  7. If using, add the chia seeds and mix thoroughly.
  8. Allow the mixture to cool slightly before serving.
  9. Spoon the sago pudding into serving bowls and top with diced fresh mango.
  10. Serve warm or chilled as desired.
