- Vegetable broth - 250 ml
- Red curry paste - 2 tablespoons
- Chickpeas (cooked) - 100 grams
- Cornstarch - 1 tablespoon
- Garlic (minced) - 1 clove
- Red bell pepper (finely chopped) - 50 grams
- Green onion (chopped) - 2 stalks
- Fresh cilantro (chopped) - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Whole grain burger buns - 2
- Cucumber (sliced) - 50 grams
- Lettuce - 2 leaves
- Coconut cream - 2 tablespoons
Steps
- Rinse quinoa under cold water, then combine it with vegetable broth in a saucepan. Bring to a boil, then reduce heat and simmer covered for about 15 minutes until liquid is absorbed.
- In a large mixing bowl, mash the cooked chickpeas with a fork until slightly chunky. Add the cooked quinoa, red curry paste, cornstarch, minced garlic, chopped red bell pepper, green onion, cilantro, salt, and black pepper. Mix until well combined.
- Form the mixture into two burger patties, compacting them well.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown.
- While the patties are cooking, prepare the burger buns by toasting them lightly in the remaining olive oil (optional).
- Assemble the burgers by placing a patty on each bun, topping with lettuce, cucumber slices, and a drizzle of coconut cream.
