Ingredients

  • Quinoa - 100 grams
  • Vegetable broth - 250 ml
  • Red curry paste - 2 tablespoons
  • Chickpeas (cooked) - 100 grams
  • Cornstarch - 1 tablespoon
  • Garlic (minced) - 1 clove
  • Red bell pepper (finely chopped) - 50 grams
  • Green onion (chopped) - 2 stalks
  • Fresh cilantro (chopped) - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Whole grain burger buns - 2
  • Cucumber (sliced) - 50 grams
  • Lettuce - 2 leaves
  • Coconut cream - 2 tablespoons

Steps

  1. Rinse quinoa under cold water, then combine it with vegetable broth in a saucepan. Bring to a boil, then reduce heat and simmer covered for about 15 minutes until liquid is absorbed.
  2. In a large mixing bowl, mash the cooked chickpeas with a fork until slightly chunky. Add the cooked quinoa, red curry paste, cornstarch, minced garlic, chopped red bell pepper, green onion, cilantro, salt, and black pepper. Mix until well combined.
  3. Form the mixture into two burger patties, compacting them well.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown.
  5. While the patties are cooking, prepare the burger buns by toasting them lightly in the remaining olive oil (optional).
  6. Assemble the burgers by placing a patty on each bun, topping with lettuce, cucumber slices, and a drizzle of coconut cream.
