- red lentils - 150 grams
- water - 500 ml
- red curry paste - 2 tablespoons
- coconut milk - 100 ml
- carrot - 1 medium, grated
- red bell pepper - 1, finely chopped
- green onion - 2, chopped
- cilantro - 2 tablespoons, chopped
- soy sauce - 1 tablespoon
- lime juice - 1 tablespoon
- salt - 1/2 teaspoon
- pepper - 1/4 teaspoon
- breadcrumbs - 50 grams
- vegetable oil - 2 tablespoons
- burger buns - 2
- lettuce leaves - 2
Steps
- Rinse the red lentils under cold water until the water runs clear.
- In a saucepan, combine the rinsed lentils and 500 ml of water. Bring to a boil, then reduce to a simmer and cook for about 15 minutes, or until the lentils are soft and most of the water is absorbed.
- Remove the cooked lentils from heat and let them cool slightly.
- In a mixing bowl, combine the cooked lentils, red curry paste, coconut milk, grated carrot, chopped red bell pepper, green onion, cilantro, soy sauce, lime juice, salt, and pepper. Mix well until combined.
- Add the breadcrumbs gradually until the mixture holds together well. You may need to adjust the amount of breadcrumbs based on the moisture of the mixture.
- Divide the lentil mixture into two equal portions and shape them into burger patties.
- Heat vegetable oil in a non-stick skillet over medium heat. Once hot, carefully place the patties in the skillet and cook for 4-5 minutes on each side or until golden brown and heated through.
- While the burgers are cooking, toast the burger buns until lightly golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the lentil burger patty, and then the top half of the bun. Serve immediately.
