- Duck breast - 200 grams
- Red curry paste - 2 tablespoons
- Coconut milk - 100 ml
- Pizza dough - 1 large (about 250 grams)
- Mozzarella cheese - 100 grams, shredded
- Red bell pepper - 1, sliced
- Fresh basil - 10 leaves
- Lime - 1, zested and juiced
- Olive oil - 1 tablespoon
- Salt - to taste
Steps
- Preheat your oven to 220°C (430°F).
- In a skillet over medium heat, add olive oil and sear the duck breast skin-side down for about 5 minutes until the skin is crispy.
- Flip the duck breast and cook for an additional 4 minutes, then remove from the skillet and let it rest for 5 minutes before slicing thinly.
- In the same skillet, add red curry paste and cook for 1 minute until fragrant, then stir in coconut milk and simmer for 2-3 minutes until slightly thickened.
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a pizza stone or baking sheet.
- Spread the red curry sauce evenly over the pizza dough, then layer the sliced duck, red bell pepper, and mozzarella cheese on top.
- Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbling.
- Once out of the oven, garnish with fresh basil, lime zest, and a squeeze of lime juice before slicing and serving.
