Ingredients

  • Duck breast - 200 grams
  • Red curry paste - 2 tablespoons
  • Coconut milk - 100 ml
  • Pizza dough - 1 large (about 250 grams)
  • Mozzarella cheese - 100 grams, shredded
  • Red bell pepper - 1, sliced
  • Fresh basil - 10 leaves
  • Lime - 1, zested and juiced
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat your oven to 220°C (430°F).
  2. In a skillet over medium heat, add olive oil and sear the duck breast skin-side down for about 5 minutes until the skin is crispy.
  3. Flip the duck breast and cook for an additional 4 minutes, then remove from the skillet and let it rest for 5 minutes before slicing thinly.
  4. In the same skillet, add red curry paste and cook for 1 minute until fragrant, then stir in coconut milk and simmer for 2-3 minutes until slightly thickened.
  5. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a pizza stone or baking sheet.
  6. Spread the red curry sauce evenly over the pizza dough, then layer the sliced duck, red bell pepper, and mozzarella cheese on top.
  7. Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbling.
  8. Once out of the oven, garnish with fresh basil, lime zest, and a squeeze of lime juice before slicing and serving.
