Ingredients

  • Duck breast - 250 grams
  • Red curry paste - 2 tablespoons
  • Coconut milk - 50 ml
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh basil - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Sliced cucumber - 50 grams
  • Sliced red onion - 50 grams

Steps

  1. Begin by scoring the skin of the duck breast in a crisscross pattern and season with salt and pepper.
  2. In a skillet over medium heat, place the duck breast skin-side down and cook for 6-8 minutes until the skin is crispy.
  3. Flip the duck breast and cook for an additional 4-5 minutes until medium-rare. Remove from heat and let rest for 5 minutes.
  4. In a bowl, combine red curry paste, coconut milk, fish sauce, and brown sugar to create a sauce.
  5. Slice the duck breast thinly and mix it with the curry sauce, ensuring the duck is well-coated.
  6. Toast the whole wheat burger buns lightly on a skillet or grill.
  7. Assemble the burgers by placing lettuce on the bottom bun, followed by the curry duck mixture, cucumber slices, red onion, and finishing with fresh cilantro and basil.
  8. Top with the other half of the bun and serve immediately.
