Ingredients

  • Ground chicken - 250 grams
  • Red curry paste - 2 tablespoons
  • Coconut milk - 2 tablespoons
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Fish sauce - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Burger buns - 2 pieces
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Mayonnaise - 2 tablespoons
  • Sriracha sauce - 1 teaspoon

Steps

  1. In a bowl, combine the ground chicken, red curry paste, coconut milk, minced garlic, grated ginger, fish sauce, lime juice, and chopped cilantro. Mix well until all ingredients are fully incorporated.
  2. Divide the mixture into two equal portions and form into patties.
  3. Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-6 minutes on each side, or until fully cooked through and golden brown.
  4. While the patties are cooking, prepare the burger buns by toasting them lightly on a separate pan or in a toaster.
  5. Spread mayonnaise on the bottom half of each bun and add a lettuce leaf, followed by the cooked chicken patty.
