Ingredients

  • Prawn meat - 100 grams, finely chopped
  • Tapioca starch - 100 grams
  • Water - 60 ml
  • Salt - 1/2 teaspoon
  • White pepper - 1/4 teaspoon
  • Garlic powder - 1/4 teaspoon
  • Sugar - 1/2 teaspoon
  • Sesame oil - 1/2 teaspoon
  • Vegetable oil - for frying

Steps

  1. In a mixing bowl, combine the finely chopped prawn meat, tapioca starch, salt, white pepper, garlic powder, sugar, and sesame oil.
  2. Gradually add water while mixing until the dough is smooth and pliable.
  3. Transfer the mixture to a clean surface and knead gently for 2-3 minutes.
  4. Roll the dough into a log shape, about 2.5 cm in diameter, then wrap it tightly in plastic wrap.
  5. Steam the wrapped dough log in a steamer for about 20 minutes until firm and cooked through.
  6. Remove the log from the steamer and let it cool completely before unwrapping.
  7. Once cooled, slice the log into thin discs (about 2-3 mm thick).
  8. Heat vegetable oil in a deep frying pan over medium heat.
  9. Fry the sliced crackers in batches, turning them occasionally, until they puff up and turn golden brown, about 1-2 minutes.
  10. Remove the fried crackers with a slotted spoon and place them on paper towels to drain excess oil.
  11. Serve the prawn crackers warm with a dipping sauce of your choice.
