Ingredients
- Prawn meat - 100 grams, finely chopped
- Tapioca starch - 100 grams
- Water - 60 ml
- Salt - 1/2 teaspoon
- White pepper - 1/4 teaspoon
- Garlic powder - 1/4 teaspoon
- Sugar - 1/2 teaspoon
- Sesame oil - 1/2 teaspoon
- Vegetable oil - for frying
Steps
- In a mixing bowl, combine the finely chopped prawn meat, tapioca starch, salt, white pepper, garlic powder, sugar, and sesame oil.
- Gradually add water while mixing until the dough is smooth and pliable.
- Transfer the mixture to a clean surface and knead gently for 2-3 minutes.
- Roll the dough into a log shape, about 2.5 cm in diameter, then wrap it tightly in plastic wrap.
- Steam the wrapped dough log in a steamer for about 20 minutes until firm and cooked through.
- Remove the log from the steamer and let it cool completely before unwrapping.
- Once cooled, slice the log into thin discs (about 2-3 mm thick).
- Heat vegetable oil in a deep frying pan over medium heat.
- Fry the sliced crackers in batches, turning them occasionally, until they puff up and turn golden brown, about 1-2 minutes.
- Remove the fried crackers with a slotted spoon and place them on paper towels to drain excess oil.
- Serve the prawn crackers warm with a dipping sauce of your choice.
