  • Ginger, grated - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Thai chili, minced - 1 teaspoon
  • Cucumber, sliced - ½ for garnish
  • Sesame oil - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix together soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, lime juice, and sesame oil to create the marinade.
  3. Cut the pork belly into bite-sized cubes and add them to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes.
  4. Spread the marinated pork belly pieces on a baking tray lined with parchment paper, making sure they are not overcrowded.
  5. Bake in the preheated oven for 25-30 minutes, or until the pork belly is crispy and golden brown, turning halfway through for even cooking.
  6. While the pork is baking, prepare the dipping sauce by mixing chopped cilantro and minced Thai chili in a small bowl.
