Ingredients

  • Mackerel fillets - 400 grams
  • Garlic - 4 cloves, minced
  • Bird's eye chili - 3, finely chopped
  • Fish sauce - 3 tablespoons
  • Palm sugar - 1 tablespoon, grated
  • Lime juice - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Vegetable oil - 1 tablespoon
  • Lettuce leaves - 4, for serving
  • Cucumber - 1, sliced for garnish

Steps

  1. In a bowl, mix minced garlic, chopped bird's eye chili, fish sauce, palm sugar, and lime juice to create the marinade.
  2. Add the mackerel fillets to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  3. Preheat the grill or a grilling pan over medium-high heat. Brush with vegetable oil to prevent sticking.
  4. Place the marinated mackerel fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is cooked through and has grill marks.
  5. Remove from the grill and let rest for a couple of minutes. Garnish with chopped cilantro and serve with lettuce leaves and cucumber slices on the side.
