- Mackerel fillets - 400 grams

- Fish sauce - 3 tablespoons
- Palm sugar - 1 tablespoon, grated
- Lime juice - 2 tablespoons
- Cilantro - 2 tablespoons, chopped
- Vegetable oil - 1 tablespoon
- Lettuce leaves - 4, for serving
- Cucumber - 1, sliced for garnish
Steps
- In a bowl, mix minced garlic, chopped bird's eye chili, fish sauce, palm sugar, and lime juice to create the marinade.
- Add the mackerel fillets to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
- Preheat the grill or a grilling pan over medium-high heat. Brush with vegetable oil to prevent sticking.
- Place the marinated mackerel fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is cooked through and has grill marks.
- Remove from the grill and let rest for a couple of minutes. Garnish with chopped cilantro and serve with lettuce leaves and cucumber slices on the side.
