Ingredients

  • Snapper fillet - 300 grams
  • Garlic - 4 cloves, minced
  • Fresh lime juice - 4 tablespoons
  • Lime zest - 1 teaspoon
  • Fish sauce - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Red chili - 1 small, sliced (optional)
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Rinse the snapper fillet under cold water and pat it dry with paper towels.
  2. In a bowl, mix the minced garlic, lime juice, lime zest, fish sauce, black pepper, and salt to create a marinade.
  3. Place the snapper fillet in a shallow dish and pour the marinade over it, ensuring the fish is well-coated. Let it marinate for 15 minutes.
  4. Preheat a steamer or a pot with a steaming basket over medium heat.
  5. Once the water is boiling, place the marinated snapper in the steaming basket. Cover and steam for about 10-12 minutes, or until the fish flakes easily with a fork.
  6. While the fish is steaming, heat the olive oil in a small pan over medium heat. Add the sliced red chili (if using) and sauté for 1-2 minutes until fragrant.
  7. Once the snapper is done, carefully remove it from the steamer and transfer it to a serving plate.
  8. Drizzle the sautéed chili oil over the steamed snapper and garnish with chopped cilantro. Serve immediately.
