- Lime juice - 3 tablespoons
- Fish sauce - 2 tablespoons
- Garlic - 3 cloves, minced
- Chili flakes - 1 teaspoon
- Fresh coriander (cilantro) - 2 tablespoons, chopped
- Thai basil - 2 tablespoons, chopped
- Shallots - 2, thinly sliced
- Coconut oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- In a bowl, mix lime juice, fish sauce, minced garlic, chili flakes, salt, and pepper to create a marinade.
- Add the white fish fillets to the marinade and let it sit for about 15 minutes.
- While the fish is marinating, prepare the grill or a skillet over medium heat and add coconut oil.
- Once the oil is hot, place the marinated fish fillets on the grill or skillet and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily.
- In the last minute of cooking, add the sliced shallots on top of the fish to slightly caramelize them.
- Remove the fish from the grill or skillet and garnish with fresh coriander and Thai basil before serving.
