Ingredients

  • White fish fillets (such as snapper) - 200 grams
  • Lime juice - 3 tablespoons
  • Fish sauce - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Chili flakes - 1 teaspoon
  • Fresh coriander (cilantro) - 2 tablespoons, chopped
  • Thai basil - 2 tablespoons, chopped
  • Shallots - 2, thinly sliced
  • Coconut oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, mix lime juice, fish sauce, minced garlic, chili flakes, salt, and pepper to create a marinade.
  2. Add the white fish fillets to the marinade and let it sit for about 15 minutes.
  3. While the fish is marinating, prepare the grill or a skillet over medium heat and add coconut oil.
  4. Once the oil is hot, place the marinated fish fillets on the grill or skillet and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily.
  5. In the last minute of cooking, add the sliced shallots on top of the fish to slightly caramelize them.
  6. Remove the fish from the grill or skillet and garnish with fresh coriander and Thai basil before serving.
