Ingredients

  • Whole white fish (such as snapper or tilapia) - 400 grams
  • Garlic - 3 cloves, minced
  • Fresh coriander (cilantro) - 2 tablespoons, chopped
  • Fresh lime juice - 60 ml
  • Red chili (bird's eye) - 1, finely sliced
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Water - 250 ml
  • Lime wedges - for garnish
  • Cucumber - 1/2, sliced (for serving)

Steps

  1. Prepare the fish by cleaning and making 3 diagonal slashes on each side to allow flavors to penetrate.
  2. In a small bowl, mix together the minced garlic, lime juice, fish sauce, sugar, and sliced chili to create the sauce.
  3. Place the fish on a heatproof plate that fits inside a steamer. Pour half of the sauce over the fish, ensuring it covers the slashes.
  4. Fill a pot with water and bring it to a boil. Once boiling, place the steamer with the fish over the pot, cover, and steam for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  5. Once cooked, carefully remove the plate from the steamer. Drizzle the remaining sauce over the fish.
  6. Garnish with chopped coriander and serve with lime wedges and cucumber slices on the side.
