- Pizza dough - 1 medium (about 250g)
- Cooked jasmine rice - 200g
- Pineapple chunks - 100g (fresh or canned, drained)
- Bell pepper - 1 small (diced)
- Carrot - 1 small (grated)
- Green onion - 2 stalks (sliced)
- Soy sauce - 2 tablespoons
- Vegetable oil - 1 tablespoon
- Garlic - 2 cloves (minced)
- Ginger - 1 teaspoon (grated)
- Cilantro - 2 tablespoons (chopped)
- Lime - 1 (cut into wedges for serving)
- Mozzarella cheese - 100g (shredded)
- Red pepper flakes - 1/2 teaspoon (optional)
Steps
- Preheat the oven to 220°C (425°F).
- In a large skillet, heat the vegetable oil over medium heat. Add minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
- Add the diced bell pepper and grated carrot to the skillet, cooking for another 3-4 minutes until softened.
- Stir in the cooked jasmine rice, pineapple chunks, soy sauce, and red pepper flakes (if using). Cook for another 5 minutes, stirring occasionally to combine the flavors.
- Remove the skillet from heat and stir in the chopped cilantro and sliced green onions.
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking tray or pizza stone.
- Spread the pineapple fried rice mixture evenly over the pizza dough, leaving a small border around the edges.
- Sprinkle the shredded mozzarella cheese evenly on top of the fried rice mixture.
- Bake the pizza in the preheated oven for about 12-15 minutes, or until the crust is golden and the cheese is bubbly.
- Remove the pizza from the oven and let it cool for a couple of minutes before slicing. Serve with lime wedges on the side.
