- oyster sauce (halal) - 1 tablespoon
- black pepper - 1/2 teaspoon
- coriander powder - 1/2 teaspoon
- vegetable oil - 2 tablespoons
- burger buns - 2
- lettuce leaves - 2
- cucumber slices - 4
- sriracha sauce - to taste
- lime wedges - for serving
Steps
- Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced carrot and green peas to the pan, stirring for about 3 minutes until the vegetables are tender.
- Incorporate the shredded chicken and pineapple chunks, cooking for an additional 2-3 minutes until heated through.
- Stir in the cooked jasmine rice, soy sauce, oyster sauce, black pepper, and coriander powder. Mix thoroughly and cook for another 5 minutes, allowing the rice to lightly fry.
- Remove the fried rice mixture from heat and let it cool slightly.
- In a separate pan, toast the burger buns until golden brown.
- Assemble the burgers by placing a generous scoop of the pineapple fried rice on the bottom half of each bun. Top with a lettuce leaf and cucumber slices.
- Drizzle sriracha sauce on top, then close the burger with the top half of the bun.
- Serve the burgers with lime wedges on the side.
