  • cooked jasmine rice - 200 grams
  • pineapple chunks - 100 grams
  • cooked chicken breast, shredded - 150 grams
  • green peas - 50 grams
  • carrot, diced - 50 grams
  • onion, finely chopped - 1 small
  • garlic, minced - 2 cloves
  • soy sauce - 2 tablespoons
  • oyster sauce (halal) - 1 tablespoon
  • black pepper - 1/2 teaspoon
  • coriander powder - 1/2 teaspoon
  • vegetable oil - 2 tablespoons
  • burger buns - 2
  • lettuce leaves - 2
  • cucumber slices - 4
  • sriracha sauce - to taste
  • lime wedges - for serving

Steps

  1. Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Add the diced carrot and green peas to the pan, stirring for about 3 minutes until the vegetables are tender.
  3. Incorporate the shredded chicken and pineapple chunks, cooking for an additional 2-3 minutes until heated through.
  4. Stir in the cooked jasmine rice, soy sauce, oyster sauce, black pepper, and coriander powder. Mix thoroughly and cook for another 5 minutes, allowing the rice to lightly fry.
  5. Remove the fried rice mixture from heat and let it cool slightly.
  6. In a separate pan, toast the burger buns until golden brown.
  7. Assemble the burgers by placing a generous scoop of the pineapple fried rice on the bottom half of each bun. Top with a lettuce leaf and cucumber slices.
  8. Drizzle sriracha sauce on top, then close the burger with the top half of the bun.
  9. Serve the burgers with lime wedges on the side.
