Ingredients

  • Rice noodles - 150 grams
  • Pineapple chunks - 150 grams (fresh or canned)
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced (any color)
  • Snap peas - 100 grams, trimmed
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons (low sodium)
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the julienned carrot and sliced bell pepper to the skillet, cooking for 3-4 minutes until they start to soften.
  5. Stir in the snap peas and pineapple chunks, cooking for another 2-3 minutes.
  6. Add the cooked rice noodles to the skillet, followed by soy sauce and sesame oil. Toss everything together until well combined and heated through, about 2-3 minutes.
  7. Season with salt and black pepper to taste.
  8. Remove from heat, stir in chopped green onions and cilantro.
  9. Serve warm with lime wedges on the side for squeezing over the noodles.
