- Rice noodles - 150 grams
- Pineapple chunks - 150 grams (fresh or canned)
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced (any color)
- Snap peas - 100 grams, trimmed
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons (low sodium)
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a large skillet or wok, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the julienned carrot and sliced bell pepper to the skillet, cooking for 3-4 minutes until they start to soften.
- Stir in the snap peas and pineapple chunks, cooking for another 2-3 minutes.
- Add the cooked rice noodles to the skillet, followed by soy sauce and sesame oil. Toss everything together until well combined and heated through, about 2-3 minutes.
- Season with salt and black pepper to taste.
- Remove from heat, stir in chopped green onions and cilantro.
- Serve warm with lime wedges on the side for squeezing over the noodles.
