  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Cucumber (sliced) - 1/2 medium
  • Coconut milk - 100 ml
  • Peanut butter - 1 tablespoon
  • Sriracha (optional) - to taste

Steps

  1. In a mixing bowl, combine ground chicken or turkey, finely chopped pineapple, red curry paste, chopped cilantro, minced garlic, soy sauce, lime juice, salt, and black pepper. Mix until well combined.
  2. Form the mixture into two patties, about 1.5 cm thick.
  3. Preheat a non-stick skillet over medium heat and cook the patties for 5-6 minutes on each side, or until fully cooked and golden brown.
  4. While the patties are cooking, prepare the coconut curry sauce by combining coconut milk and peanut butter in a small saucepan over low heat. Stir until smooth and heated through, adding sriracha if desired for extra spice.
  5. Toast the whole wheat burger buns in the skillet for 1-2 minutes until golden.
  6. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the cooked patty, sliced cucumber, and a generous drizzle of coconut curry sauce. Top with the other half of the bun.
