- Red curry paste - 2 tablespoons

- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon

- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Cucumber (sliced) - 1/2 medium
- Coconut milk - 100 ml
- Peanut butter - 1 tablespoon

Steps
- In a mixing bowl, combine ground chicken or turkey, finely chopped pineapple, red curry paste, chopped cilantro, minced garlic, soy sauce, lime juice, salt, and black pepper. Mix until well combined.
- Form the mixture into two patties, about 1.5 cm thick.
- Preheat a non-stick skillet over medium heat and cook the patties for 5-6 minutes on each side, or until fully cooked and golden brown.
- While the patties are cooking, prepare the coconut curry sauce by combining coconut milk and peanut butter in a small saucepan over low heat. Stir until smooth and heated through, adding sriracha if desired for extra spice.
- Toast the whole wheat burger buns in the skillet for 1-2 minutes until golden.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the cooked patty, sliced cucumber, and a generous drizzle of coconut curry sauce. Top with the other half of the bun.
