  • Olive oil - 2 tablespoons

  • Black pepper - 1/4 teaspoon
  • Peanut butter - 3 tablespoons
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Water - 2 tablespoons

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a bowl, toss the sliced bell peppers, zucchini, red onion, and mushrooms with olive oil, salt, and black pepper until evenly coated.
  3. Grill the vegetables for about 10-12 minutes, turning occasionally, until they are tender and have nice grill marks.
