Ingredients

  • Breadcrumbs - 60 grams (1/2 cup)
  • Red onion - 30 grams (1/4 cup, finely chopped)
  • Garlic - 2 cloves (minced)
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - 15 grams (1/4 cup, chopped)
  • Vegetable oil - 2 tablespoons
  • Burger buns - 2 (whole wheat or regular)
  • Cucumber - 1/2 (sliced)
  • Lettuce - 2 leaves
  • Peanut butter - 3 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Water - 2 tablespoons
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. In a mixing bowl, combine mashed chickpeas, breadcrumbs, red onion, garlic, coriander powder, cumin powder, salt, black pepper, and cilantro. Mix until well combined.
  2. Form the mixture into 2 equal-sized patties.
  3. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the patties and cook for about 4-5 minutes on each side until golden brown and heated through.
  4. While the patties are cooking, prepare the peanut sauce by whisking together peanut butter, soy sauce, lime juice, water, and chili flakes in a small bowl until smooth. Adjust the consistency with more water if needed.
  5. Toast the burger buns in the same skillet for 1-2 minutes until lightly golden.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a chickpea patty, cucumber slices, and a generous drizzle of peanut sauce. Top with the other half of the bun.
