- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cilantro - 15 grams (1/4 cup, chopped)
- Vegetable oil - 2 tablespoons
- Burger buns - 2 (whole wheat or regular)
- Cucumber - 1/2 (sliced)
- Lettuce - 2 leaves
- Peanut butter - 3 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Water - 2 tablespoons
- Chili flakes - 1/2 teaspoon (optional)
Steps
- In a mixing bowl, combine mashed chickpeas, breadcrumbs, red onion, garlic, coriander powder, cumin powder, salt, black pepper, and cilantro. Mix until well combined.
- Form the mixture into 2 equal-sized patties.
- Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the patties and cook for about 4-5 minutes on each side until golden brown and heated through.
- While the patties are cooking, prepare the peanut sauce by whisking together peanut butter, soy sauce, lime juice, water, and chili flakes in a small bowl until smooth. Adjust the consistency with more water if needed.
- Toast the burger buns in the same skillet for 1-2 minutes until lightly golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a chickpea patty, cucumber slices, and a generous drizzle of peanut sauce. Top with the other half of the bun.
