  • Red curry paste - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Oats - 50 grams, ground
  • Salt - 1/2 teaspoon
  • Ground black pepper - 1/4 teaspoon
  • Burger buns - 2, whole grain preferred
  • Cucumber - 1/2, thinly sliced
  • Carrot - 1 small, grated
  • Fresh mint - 1 tablespoon, chopped
  • Sesame oil - 1 teaspoon
  • Chili flakes - to taste

Steps

  1. In a mixing bowl, mash the cooked chickpeas with a fork until slightly chunky.
  2. Add peanut butter, red curry paste, minced garlic, cilantro, lime juice, soy sauce, ground oats, salt, and pepper to the mashed chickpeas and mix until well combined.
  3. Form the mixture into two equal-sized patties, making sure they are compact.
  4. Heat a non-stick skillet over medium heat and add a splash of oil. Cook the patties for about 5-7 minutes on each side until golden brown and heated through.
  5. While the patties are cooking, prepare the cucumber salad by mixing sliced cucumber, grated carrot, mint, sesame oil, and chili flakes in a separate bowl. Toss to combine.
  6. Toast the burger buns lightly in the same skillet for 1-2 minutes, cut side down.
  7. Assemble the burgers by placing the patty on the bottom bun, topping it with the cucumber salad, and finally placing the top bun on.
  8. Serve immediately and enjoy your delicious Peanut Satay Burger!
