Ingredients

  • all-purpose flour - 100 grams
  • coconut milk - 100 milliliters
  • pandan juice - 50 milliliters
  • sugar - 50 grams
  • baking powder - 1 teaspoon
  • coconut oil - 30 grams
  • salt - a pinch
  • vanilla extract - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F) and grease two 10 cm round cake pans.
  2. In a mixing bowl, combine the all-purpose flour, baking powder, and salt.
  3. In another bowl, whisk together the sugar, coconut milk, pandan juice, melted coconut oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and smooth.
  5. Divide the batter evenly between the two prepared cake pans.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
