- Coconut milk - 200 ml
- Pandan leaf extract - 2 tablespoons
- Eggs - 2 large
- Honey or maple syrup - 2 tablespoons
- Cornstarch - 1 tablespoon
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, whisk together the eggs, honey (or maple syrup), and a pinch of salt until well combined.
- In a saucepan, heat the coconut milk over low heat. Stir in the pandan leaf extract.
- Gradually pour the warm coconut milk mixture into the egg mixture while continuously whisking to prevent the eggs from curdling.
- Sift the cornstarch into the mixture and whisk until smooth and well combined.
- Pour the custard mixture into small ramekins or a baking dish.
- Place the ramekins in a baking tray and add hot water to the tray until it reaches halfway up the sides of the ramekins to create a water bath.
- Bake in the preheated oven for about 20-25 minutes, or until the custard is set but still slightly wobbly in the center.
- Remove from the oven and let cool for a few minutes before refrigerating for at least 1 hour before serving.
