- Almond flour - 150 grams
- Mozzarella cheese (shredded) - 100 grams
- Cream cheese - 50 grams
- Egg - 1 large
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Cooked pork (shredded) - 200 grams
- Panang curry paste - 2 tablespoons
- Coconut milk - 100 ml
- Fresh basil leaves - 10 grams
- Red bell pepper (sliced) - 50 grams
- Lime (for garnish) - 1
Steps
- Preheat your oven to 220°C (425°F).
- In a mixing bowl, combine the almond flour, 50 grams of shredded mozzarella cheese, cream cheese, egg, baking powder, and salt. Mix until a dough forms.
- Press the dough onto a baking sheet lined with parchment paper to form a pizza base, about 1 cm thick.
- Bake the pizza base in the preheated oven for 10-12 minutes or until golden brown.
- While the base is baking, in a small saucepan, mix the shredded pork with Panang curry paste and coconut milk over medium heat. Simmer for 5-7 minutes until warmed through.
- Once the base is done, remove it from the oven and spread the Panang pork mixture evenly over the pizza.
- Top with the remaining mozzarella cheese and sliced red bell pepper.
- Return the pizza to the oven and bake for an additional 8-10 minutes, until the cheese is bubbly and melted.
- Remove from the oven, garnish with fresh basil leaves, and serve with lime wedges.
