Ingredients

  • Pizza dough - 200 grams
  • Coconut milk - 100 ml
  • Panang curry paste - 2 tablespoons
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh basil leaves - 10 grams, chopped
  • Cilantro - 10 grams, chopped
  • Lime juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a bowl, mix the coconut milk and Panang curry paste until well combined to create the sauce.
  3. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  4. Transfer the rolled-out dough to a baking sheet or pizza stone lined with parchment paper.
  5. Spread the coconut curry sauce evenly over the pizza dough, leaving a small border around the edges.
  6. Arrange the sliced red bell pepper, zucchini, and halved cherry tomatoes on top of the sauce.
  7. Drizzle olive oil over the vegetables and season with salt and black pepper to taste.
  8. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
  9. Once out of the oven, sprinkle the chopped basil and cilantro over the pizza.
  10. Drizzle lime juice on top before slicing and serving.
