- Coconut milk - 100 ml
- Panang curry paste - 2 tablespoons
- Red bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Cherry tomatoes - 100 grams, halved
- Fresh basil leaves - 10 grams, chopped
- Cilantro - 10 grams, chopped
- Lime juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- In a bowl, mix the coconut milk and Panang curry paste until well combined to create the sauce.
- Roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled-out dough to a baking sheet or pizza stone lined with parchment paper.
- Spread the coconut curry sauce evenly over the pizza dough, leaving a small border around the edges.
- Arrange the sliced red bell pepper, zucchini, and halved cherry tomatoes on top of the sauce.
- Drizzle olive oil over the vegetables and season with salt and black pepper to taste.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
- Once out of the oven, sprinkle the chopped basil and cilantro over the pizza.
- Drizzle lime juice on top before slicing and serving.
