Ingredients

  • Ground chicken - 250 grams
  • Panang curry paste - 2 tablespoons
  • Cilantro, chopped - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic, minced - 1 clove
  • Fresh ginger, grated - 1 teaspoon
  • Whole wheat burger buns - 2
  • Coconut milk - 50 ml
  • Lettuce leaves - 2
  • Sliced cucumber - 50 grams
  • Sliced red onion - 50 grams
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a mixing bowl, combine ground chicken, Panang curry paste, chopped cilantro, lime juice, minced garlic, grated ginger, salt, and pepper. Mix until well combined.
  2. Form the mixture into two equal patties.
  3. Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-7 minutes on each side, or until fully cooked and golden brown.
  4. While the patties are cooking, prepare the coconut sauce by gently heating the coconut milk in a small saucepan. Add salt and pepper to taste, and keep warm.
  5. Toast the whole wheat burger buns lightly on a grill or in a toaster.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced cucumber, and sliced red onion.
  7. Drizzle the warm coconut sauce over the top of each burger and close with the top half of the bun.
