Steps

  1. Rinse the morning glory thoroughly to remove any dirt and cut into 3-inch lengths.
  2. Heat the vegetable oil in a wok or large skillet over medium-high heat.
  3. Add the minced garlic and sliced chili to the oil, stirring for about 30 seconds until fragrant.
  4. Add the morning glory to the wok, stirring quickly to combine with the garlic and chili.
  5. Pour in the soy sauce, vegan oyster sauce, and sugar, and continue to stir-fry for about 3-4 minutes until the morning glory is wilted but still bright green.
  6. Remove from heat and squeeze fresh lime juice over the dish, tossing to combine.
