Ingredients

  • Glass noodles - 100 grams
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Carrot, julienned - 1 medium
  • Red bell pepper, sliced - 1 medium
  • Zucchini, julienned - 1 small
  • Green onion, chopped - 2 stalks
  • Eggs - 2 large
  • Soy sauce (kosher) - 3 tablespoons
  • Oyster sauce (kosher) - 1 tablespoon
  • White pepper - 1/2 teaspoon
  • Sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Cilantro, chopped - for garnish

Steps

  1. Soak the glass noodles in warm water for about 10-15 minutes until softened, then drain and set aside.
  2. In a large wok or skillet, heat the vegetable oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the julienned carrot, sliced red bell pepper, and zucchini. Stir-fry for 3-4 minutes until vegetables are just tender.
  4. Push the vegetables to the side of the wok, crack the eggs into the empty space, and scramble them until cooked through, about 1-2 minutes.
  5. Add the soaked glass noodles to the wok, followed by the soy sauce, oyster sauce, white pepper, and sugar. Toss everything together and stir-fry for another 2-3 minutes until well combined.
  6. Drizzle with sesame oil and add chopped green onion, tossing briefly to combine.
  7. Remove from heat, garnish with cilantro, and serve immediately.
