Ingredients
- Rice noodles - 150 grams
- Olive oil - 2 tablespoons
- Garlic, minced - 3 cloves
- Shallots, sliced - 2 medium
- Red bell pepper, sliced - 1 medium
- Zucchini, julienned - 1 medium
- Carrot, julienned - 1 medium
- Vegan shrimp (or similar substitute) - 100 grams
- Soy sauce - 3 tablespoons
- Lime juice - 2 tablespoons
- Brown sugar - 1 tablespoon
- Tofu, cubed - 100 grams
- Green onions, chopped - 2 stalks
- Cilantro, chopped - 2 tablespoons
- Crushed peanuts - 2 tablespoons
- Chili flakes - to taste
Steps
- Soak the rice noodles in warm water for about 15 minutes or until softened, then drain and set aside.
- In a large pan or wok, heat olive oil over medium heat and add minced garlic and sliced shallots. Stir-fry for about 2 minutes until fragrant.
- Add the sliced red bell pepper, zucchini, and carrot to the pan. Stir-fry for another 3-4 minutes until the vegetables are slightly tender.
- Add the vegan shrimp and cubed tofu to the pan, cooking for an additional 5 minutes until heated through.
- In a small bowl, mix together the soy sauce, lime juice, and brown sugar. Pour this sauce over the stir-fried ingredients.
- Add the drained rice noodles to the pan and toss everything together until well combined and heated through, about 2-3 minutes.
- Remove from heat and stir in the chopped green onions and cilantro.
- Serve hot, garnished with crushed peanuts and chili flakes to taste.
