Ingredients

  • Rice noodles - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Shallots, sliced - 2 medium
  • Red bell pepper, sliced - 1 medium
  • Zucchini, julienned - 1 medium
  • Carrot, julienned - 1 medium
  • Vegan shrimp (or similar substitute) - 100 grams
  • Soy sauce - 3 tablespoons
  • Lime juice - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Tofu, cubed - 100 grams
  • Green onions, chopped - 2 stalks
  • Cilantro, chopped - 2 tablespoons
  • Crushed peanuts - 2 tablespoons
  • Chili flakes - to taste

Steps

  1. Soak the rice noodles in warm water for about 15 minutes or until softened, then drain and set aside.
  2. In a large pan or wok, heat olive oil over medium heat and add minced garlic and sliced shallots. Stir-fry for about 2 minutes until fragrant.
  3. Add the sliced red bell pepper, zucchini, and carrot to the pan. Stir-fry for another 3-4 minutes until the vegetables are slightly tender.
  4. Add the vegan shrimp and cubed tofu to the pan, cooking for an additional 5 minutes until heated through.
  5. In a small bowl, mix together the soy sauce, lime juice, and brown sugar. Pour this sauce over the stir-fried ingredients.
  6. Add the drained rice noodles to the pan and toss everything together until well combined and heated through, about 2-3 minutes.
  7. Remove from heat and stir in the chopped green onions and cilantro.
  8. Serve hot, garnished with crushed peanuts and chili flakes to taste.
