- Rice noodles - 150 grams
- Shrimp (peeled and deveined) - 200 grams
- Eggs - 2 large
- Vegetable oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Green onion (sliced) - 2 stalks
- Carrot (julienned) - 1 medium
- Bell pepper (sliced) - 1 medium
- Bean sprouts - 100 grams
- Tamarind paste - 2 tablespoons
- Fish sauce - 1 tablespoon
- Sugar - 1 tablespoon
- Lime (juiced) - 1
- Chili flakes - 1 teaspoon
- Coriander (fresh, chopped) - for garnish
- Peanuts (crushed) - for garnish
Steps
- Soak the rice noodles in warm water for about 20 minutes or until softened, then drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté until fragrant.
- Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Push the shrimp to one side of the pan.
- Crack the eggs into the skillet and scramble them until fully cooked, then mix with the shrimp.
- Add the julienned carrot and sliced bell pepper to the skillet, and stir-fry for 2-3 minutes until slightly softened.
- Stir in the soaked rice noodles, bean sprouts, tamarind paste, fish sauce, sugar, lime juice, and chili flakes. Toss everything together until well combined and heated through, about 3-4 minutes.
- Serve hot, garnished with crushed peanuts and fresh coriander.
