Ingredients

  • Rice noodles - 150 grams
  • Shrimp (peeled and deveined) - 200 grams
  • Eggs - 2 large
  • Vegetable oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Green onion (sliced) - 2 stalks
  • Carrot (julienned) - 1 medium
  • Bell pepper (sliced) - 1 medium
  • Bean sprouts - 100 grams
  • Tamarind paste - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar - 1 tablespoon
  • Lime (juiced) - 1
  • Chili flakes - 1 teaspoon
  • Coriander (fresh, chopped) - for garnish
  • Peanuts (crushed) - for garnish

Steps

  1. Soak the rice noodles in warm water for about 20 minutes or until softened, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté until fragrant.
  3. Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Push the shrimp to one side of the pan.
  4. Crack the eggs into the skillet and scramble them until fully cooked, then mix with the shrimp.
  5. Add the julienned carrot and sliced bell pepper to the skillet, and stir-fry for 2-3 minutes until slightly softened.
  6. Stir in the soaked rice noodles, bean sprouts, tamarind paste, fish sauce, sugar, lime juice, and chili flakes. Toss everything together until well combined and heated through, about 3-4 minutes.
  7. Serve hot, garnished with crushed peanuts and fresh coriander.
