Ingredients

  • Rice noodles - 150 grams
  • Large shrimp, peeled and deveined - 200 grams
  • Eggs - 2 large
  • Bean sprouts - 100 grams
  • Green onions, chopped - 3 stalks
  • Garlic, minced - 2 cloves
  • Tamarind paste - 2 tablespoons
  • Fish sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Peanuts, crushed - 30 grams
  • Cilantro, chopped - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Red chili flakes - to taste

Steps

  1. Soak the rice noodles in warm water for 20 minutes until softened, then drain and set aside.
  2. In a small bowl, mix the tamarind paste, fish sauce, brown sugar, and lime juice to create the sauce.
  3. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the minced garlic and sauté for 30 seconds until fragrant.
  4. Add the shrimp to the pan and cook for 2-3 minutes until they turn pink and are cooked through. Remove shrimp from the pan and set aside.
  5. In the same pan, add another tablespoon of vegetable oil. Crack the eggs into the pan and scramble until just set.
  6. Add the softened rice noodles to the pan along with the prepared sauce. Toss everything together to coat the noodles evenly.
  7. Stir in the cooked shrimp, bean sprouts, and chopped green onions. Cook for an additional 2-3 minutes until everything is heated through.
  8. Serve the Pad Thai Goong hot, garnished with crushed peanuts, chopped cilantro, and red chili flakes to taste.
