- Rice noodles - 150 grams
- Large shrimp, peeled and deveined - 200 grams
- Eggs - 2 large
- Bean sprouts - 100 grams
- Green onions, chopped - 3 stalks
- Garlic, minced - 2 cloves
- Tamarind paste - 2 tablespoons
- Fish sauce - 2 tablespoons
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Peanuts, crushed - 30 grams
- Cilantro, chopped - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Red chili flakes - to taste
Steps
- Soak the rice noodles in warm water for 20 minutes until softened, then drain and set aside.
- In a small bowl, mix the tamarind paste, fish sauce, brown sugar, and lime juice to create the sauce.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the minced garlic and sauté for 30 seconds until fragrant.
- Add the shrimp to the pan and cook for 2-3 minutes until they turn pink and are cooked through. Remove shrimp from the pan and set aside.
- In the same pan, add another tablespoon of vegetable oil. Crack the eggs into the pan and scramble until just set.
- Add the softened rice noodles to the pan along with the prepared sauce. Toss everything together to coat the noodles evenly.
- Stir in the cooked shrimp, bean sprouts, and chopped green onions. Cook for an additional 2-3 minutes until everything is heated through.
- Serve the Pad Thai Goong hot, garnished with crushed peanuts, chopped cilantro, and red chili flakes to taste.
