Ingredients

  • Rice noodles - 140 grams
  • Chicken breast (boneless, skinless) - 200 grams
  • Eggs - 2 large
  • Bean sprouts - 100 grams
  • Green onions - 4 stalks
  • Carrot (julienned) - 1 medium
  • Peanuts (crushed) - 30 grams
  • Garlic (minced) - 2 cloves
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Tamarind paste - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Cilantro (for garnish) - a handful

Steps

  1. Soak rice noodles in warm water for about 20 minutes until softened, then drain.
  2. In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat and add minced garlic. Sauté until fragrant.
  3. Add chicken breast to the pan, cooking until browned and cooked through, about 5-7 minutes. Remove from pan and set aside.
  4. In the same pan, add remaining oil and the julienned carrot. Stir-fry for 2-3 minutes until slightly softened.
  5. Push the vegetables to one side of the pan, crack the eggs into the other side, and scramble until just set.
  6. Add the softened noodles, cooked chicken, bean sprouts, fish sauce, soy sauce, tamarind paste, and lime juice to the pan. Toss everything together for 2-3 minutes until well combined and heated through.
  7. Remove from heat and garnish with crushed peanuts, chopped green onions, and cilantro. Serve immediately.
