- Rice noodles - 140 grams
- Chicken breast (boneless, skinless) - 200 grams
- Eggs - 2 large
- Bean sprouts - 100 grams
- Green onions - 4 stalks
- Carrot (julienned) - 1 medium
- Peanuts (crushed) - 30 grams
- Garlic (minced) - 2 cloves
- Fish sauce - 2 tablespoons
- Soy sauce - 1 tablespoon
- Tamarind paste - 1 tablespoon
- Lime juice - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Cilantro (for garnish) - a handful
Steps
- Soak rice noodles in warm water for about 20 minutes until softened, then drain.
- In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat and add minced garlic. Sauté until fragrant.
- Add chicken breast to the pan, cooking until browned and cooked through, about 5-7 minutes. Remove from pan and set aside.
- In the same pan, add remaining oil and the julienned carrot. Stir-fry for 2-3 minutes until slightly softened.
- Push the vegetables to one side of the pan, crack the eggs into the other side, and scramble until just set.
- Add the softened noodles, cooked chicken, bean sprouts, fish sauce, soy sauce, tamarind paste, and lime juice to the pan. Toss everything together for 2-3 minutes until well combined and heated through.
- Remove from heat and garnish with crushed peanuts, chopped green onions, and cilantro. Serve immediately.
