- Chickpeas - 200 grams (cooked)
- Brown rice - 50 grams (cooked)
- Carrot - 1 medium, grated
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Peanut butter - 1 tablespoon
- Lime juice - 1 tablespoon
- Coriander - 1 teaspoon (dried)
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Breadcrumbs - 50 grams
- Burger buns - 2 (vegan)
- Cucumber - 1/2, thinly sliced
- Lettuce - 2 leaves
- Peanut sauce - for drizzling
- Chili flakes - to taste (optional)
Steps
- In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cooked brown rice, grated carrot, chopped green onion, minced garlic, grated ginger, soy sauce, peanut butter, lime juice, dried coriander, cumin, salt, black pepper, and breadcrumbs to the bowl.
- Mix all the ingredients thoroughly until well combined. If the mixture is too wet, add more breadcrumbs until it holds together.
- Form the mixture into two patties of equal size.
- Heat a non-stick skillet over medium heat and add a splash of oil. Cook the patties for about 5-7 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, prepare the burger buns by toasting them lightly.
- Assemble the burgers by placing a patty on each bun, topping with lettuce, cucumber slices, and a drizzle of peanut sauce. Optionally, sprinkle with chili flakes for extra heat.
