- Shirataki noodles - 200 grams
- Chicken breast, sliced - 150 grams
- Broccoli florets - 100 grams
- Carrot, julienned - 50 grams
- Egg - 1 large
- Soy sauce (low sodium) - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Garlic, minced - 2 cloves
- Vegetable oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Green onion, chopped - 2 tablespoons
Steps
- Rinse the Shirataki noodles under cold water and drain well. Pat dry with a paper towel.
- Heat the vegetable oil in a large non-stick skillet or wok over medium-high heat.
- Add the minced garlic and stir-fry for about 30 seconds until fragrant.
- Add the sliced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Add the broccoli florets and julienned carrots, stir-frying for another 2-3 minutes until they begin to soften.
- Push the chicken and vegetables to one side of the skillet, and crack the egg into the empty space. Scramble the egg until fully cooked.
- Add the Shirataki noodles to the skillet and pour in the soy sauce and oyster sauce. Toss everything together to coat the noodles evenly.
- Season with black pepper and continue to stir-fry for an additional 2-3 minutes until everything is heated through.
- Garnish with chopped green onions before serving.
