- Wide rice noodles - 200 grams
- Broccoli florets - 100 grams
- Carrot, julienned - 50 grams
- Bell pepper, sliced - 50 grams
- Chinese broccoli (Kai-lan), chopped - 100 grams
- Garlic, minced - 2 cloves
- Soy sauce - 2 tablespoons
- Dark soy sauce - 1 tablespoon
- Oyster sauce (Halal) - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lime wedges - for serving
Steps
- Soak the wide rice noodles in warm water for about 10 minutes until they are soft, then drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
- Add the broccoli, carrot, bell pepper, and Chinese broccoli to the pan. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.
- Push the vegetables to one side of the pan and add the drained rice noodles to the other side. Pour the soy sauce, dark soy sauce, oyster sauce, sugar, and black pepper over the noodles.
- Toss everything together gently for another 2-3 minutes until the noodles are heated through and evenly coated with the sauce.
- Serve hot with lime wedges on the side for squeezing over the dish.
