- Whole wheat flat rice noodles - 200 grams
- Pork tenderloin, thinly sliced - 150 grams
- Broccoli florets - 100 grams
- Carrot, julienned - 50 grams
- Eggs - 2 large
- Garlic, minced - 2 cloves
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Green onions, chopped - 2 stalks
Steps
- Soak the whole wheat flat rice noodles in warm water for about 10-15 minutes until softened, then drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add minced garlic and cook until fragrant, about 30 seconds.
- Add the sliced pork tenderloin to the skillet and stir-fry for about 3-4 minutes until cooked through.
- Add the broccoli florets and julienned carrots to the skillet and stir-fry for another 2-3 minutes until the vegetables are slightly tender.
- Push the ingredients to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked.
- Add the soaked noodles to the skillet, then pour in the soy sauce and oyster sauce. Toss everything together to coat the noodles and evenly distribute the sauce.
- Season with black pepper and add chopped green onions. Stir everything for another 1-2 minutes until heated through.
- Serve hot, garnished with additional green onions if desired.
