Ingredients

  • Whole wheat flat rice noodles - 200 grams
  • Pork tenderloin, thinly sliced - 150 grams
  • Broccoli florets - 100 grams
  • Carrot, julienned - 50 grams
  • Eggs - 2 large
  • Garlic, minced - 2 cloves
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Green onions, chopped - 2 stalks

Steps

  1. Soak the whole wheat flat rice noodles in warm water for about 10-15 minutes until softened, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add minced garlic and cook until fragrant, about 30 seconds.
  3. Add the sliced pork tenderloin to the skillet and stir-fry for about 3-4 minutes until cooked through.
  4. Add the broccoli florets and julienned carrots to the skillet and stir-fry for another 2-3 minutes until the vegetables are slightly tender.
  5. Push the ingredients to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until fully cooked.
  6. Add the soaked noodles to the skillet, then pour in the soy sauce and oyster sauce. Toss everything together to coat the noodles and evenly distribute the sauce.
  7. Season with black pepper and add chopped green onions. Stir everything for another 1-2 minutes until heated through.
  8. Serve hot, garnished with additional green onions if desired.
