Ingredients

  • Wide rice noodles - 200 grams
  • Broccoli florets - 100 grams
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Tofu - 150 grams, firm, cubed
  • Soy sauce - 3 tablespoons
  • Dark soy sauce - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime - 1, cut into wedges
  • Fresh basil - a handful, for garnish

Steps

  1. Soak the wide rice noodles in warm water for about 15 minutes or until softened, then drain and set aside.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil and sauté the minced garlic until fragrant, about 30 seconds.
  4. Add the broccoli, carrot, and bell pepper to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
  5. Push the vegetables to one side of the skillet and add the softened noodles to the other side. Pour the soy sauce, dark soy sauce, and sugar over the noodles and mix well to combine.
  6. Add the cooked tofu back into the skillet, sprinkle with black pepper, and stir everything together for an additional 2-3 minutes until heated through.
  7. Remove from heat and garnish with fresh basil leaves. Serve hot with lime wedges on the side.
