- Wide rice noodles - 200 grams
- Chicken breast, sliced - 150 grams
- Eggs - 2 large
- Chinese broccoli (or broccoli) - 100 grams
- Soy sauce - 3 tablespoons
- Dark soy sauce - 1 tablespoon
- Oyster sauce - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Black pepper - 1/2 teaspoon
Steps
- Soak the wide rice noodles in hot water for about 15 minutes until softened, then drain and set aside.
- In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
- Add the sliced chicken breast to the wok and cook for 5-7 minutes until fully cooked through. Remove the chicken from the wok and set aside.
- In the same wok, add the remaining tablespoon of vegetable oil and the Chinese broccoli. Stir-fry for 2-3 minutes until slightly tender.
- Push the broccoli to one side of the wok and crack the eggs into the empty space. Scramble the eggs until cooked through, then mix them with the broccoli.
- Add the softened rice noodles back to the wok along with the cooked chicken, soy sauce, dark soy sauce, oyster sauce, and black pepper. Stir-fry everything together for 3-5 minutes until well combined and heated through.
- Serve hot, garnished with additional black pepper if desired.
