Ingredients

  • Wide rice noodles - 200 grams
  • Chicken breast, sliced - 150 grams
  • Eggs - 2 large
  • Chinese broccoli (or broccoli) - 100 grams
  • Soy sauce - 3 tablespoons
  • Dark soy sauce - 1 tablespoon
  • Oyster sauce - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Black pepper - 1/2 teaspoon

Steps

  1. Soak the wide rice noodles in hot water for about 15 minutes until softened, then drain and set aside.
  2. In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  3. Add the sliced chicken breast to the wok and cook for 5-7 minutes until fully cooked through. Remove the chicken from the wok and set aside.
  4. In the same wok, add the remaining tablespoon of vegetable oil and the Chinese broccoli. Stir-fry for 2-3 minutes until slightly tender.
  5. Push the broccoli to one side of the wok and crack the eggs into the empty space. Scramble the eggs until cooked through, then mix them with the broccoli.
  6. Add the softened rice noodles back to the wok along with the cooked chicken, soy sauce, dark soy sauce, oyster sauce, and black pepper. Stir-fry everything together for 3-5 minutes until well combined and heated through.
  7. Serve hot, garnished with additional black pepper if desired.
