Ingredients

  • Almond flour - 100g
  • Coconut flour - 30g
  • Eggs - 2 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, sliced
  • Broccoli florets - 100g
  • Carrot - 1, julienned
  • Zucchini - 1 small, sliced
  • Coconut aminos - 3 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh basil - 1/4 cup, chopped
  • Cilantro - 1/4 cup, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, coconut flour, 1 egg, and 1 tablespoon of olive oil to form the pizza dough. Mix well until it holds together.
  3. Press the dough onto a parchment-lined baking sheet to form a round pizza crust, about 1/2 cm thick.
  4. Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
  5. While the crust is baking, heat the remaining olive oil in a large skillet over medium heat.
  6. Add garlic to the skillet and sauté for 1 minute until fragrant.
  7. Add the red bell pepper, broccoli, carrot, and zucchini to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  8. Pour in the coconut aminos and lime juice, and toss to coat the vegetables. Season with salt and black pepper to taste.
  9. Remove the crust from the oven and top it with the stir-fried vegetables evenly.
  10. Return the pizza to the oven and bake for an additional 5 minutes.
  11. Garnish with fresh basil and cilantro before slicing and serving.
