  • Thai bird's eye chili - 1, sliced (optional)
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash the bok choy thoroughly under running water and slice it into bite-sized pieces, separating the stems from the leaves.
  2. In a large skillet or wok, heat the olive oil over medium heat.
  3. Add the minced garlic, grated ginger, and sliced chili to the skillet, sautéing for about 30 seconds until fragrant.
  4. Add the bok choy stems to the skillet and stir-fry for 2-3 minutes until they start to soften.
  5. Next, add the bok choy leaves and continue to stir-fry for an additional 2 minutes until they wilt.
  6. Pour in the soy sauce and sesame oil, stirring well to combine. Cook for another minute to heat through.
  7. Season with salt and black pepper to taste, then remove from heat.
  8. Sprinkle toasted sesame seeds on top before serving.
