Ingredients

  • Rice noodles - 150 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Snap peas - 100 grams
  • Green onions - 2, chopped
  • Soy sauce - 3 tablespoons
  • Oyster sauce (vegan) - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Soak the rice noodles in hot water for 15 minutes or until softened, then drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the julienned carrot and sliced bell pepper to the pan, cooking for 3-4 minutes until they begin to soften.
  5. Stir in the snap peas and cook for another 2 minutes.
  6. Add the softened rice noodles to the pan.
  7. Pour in the soy sauce, oyster sauce, lime juice, and chili flakes, tossing everything to combine well.
  8. Cook for an additional 2-3 minutes, stirring frequently until everything is heated through.
  9. Remove from heat and stir in the chopped green onions.
  10. Serve hot, garnished with fresh cilantro.
