- Rice noodles - 150 grams
- Vegetable oil - 2 tablespoons

- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Snap peas - 100 grams
- Green onions - 2, chopped
- Soy sauce - 3 tablespoons
- Oyster sauce (vegan) - 1 tablespoon
- Lime juice - 1 tablespoon
- Chili flakes - 1 teaspoon
- Fresh cilantro - for garnish
Steps
- Soak the rice noodles in hot water for 15 minutes or until softened, then drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the julienned carrot and sliced bell pepper to the pan, cooking for 3-4 minutes until they begin to soften.
- Stir in the snap peas and cook for another 2 minutes.
- Add the softened rice noodles to the pan.
- Pour in the soy sauce, oyster sauce, lime juice, and chili flakes, tossing everything to combine well.
- Cook for an additional 2-3 minutes, stirring frequently until everything is heated through.
- Remove from heat and stir in the chopped green onions.
- Serve hot, garnished with fresh cilantro.
