Pad Krapow Tofu

Ingredients

  • Firm tofu - 300 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Thai bird's eye chilies - 2, chopped
  • Red bell pepper - 1, sliced
  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegan) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Fresh Thai basil leaves - 1 cup, loosely packed
  • Cooked jasmine rice - 2 cups, for serving

Steps

  1. Press the firm tofu to remove excess moisture, then cut it into bite-sized cubes.
  2. In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  3. Add the cubed tofu and cook until golden brown on all sides, about 8-10 minutes. Remove the tofu from the pan and set aside.
  4. In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and chopped bird's eye chilies, stir-frying for 30 seconds until fragrant.
  5. Add the sliced red bell pepper and green beans, stir-frying for another 3-4 minutes until the vegetables are tender-crisp.
  6. Return the crispy tofu to the pan and add the soy sauce, vegan oyster sauce, and sugar. Stir well to combine all ingredients and cook for an additional 2 minutes.
  7. Remove from heat and fold in the Thai basil leaves until just wilted.
  8. Serve the Pad Krapow Tofu over cooked jasmine rice.
