Ingredients

  • Ground chicken - 200 grams
  • Thai bird's eye chilies - 4, minced
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Green bell pepper - 1, sliced
  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegan) - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Fresh Thai basil leaves - 1 cup, loosely packed
  • Cooked jasmine rice - 2 cups, for serving
  • Lime wedges - 2, for serving

Steps

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the minced garlic and chilies, sauté for about 30 seconds until fragrant.
  3. Add the chopped shallots and green bell pepper to the pan, stir-frying for another 2 minutes until the vegetables begin to soften.
  4. Increase the heat to high and add the ground chicken, breaking it apart with a spatula. Cook for 5-7 minutes until the chicken is fully cooked.
  5. Stir in the soy sauce and oyster sauce, mixing well to combine all the ingredients.
  6. Remove the pan from the heat and fold in the fresh Thai basil leaves until they are wilted.
  7. Serve the Pad Krapow over cooked jasmine rice and garnish with lime wedges on the side.
