Ingredients
- Ground chicken - 200 grams
- Thai bird's eye chilies - 4, minced
- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Green bell pepper - 1, sliced
- Soy sauce - 2 tablespoons
- Oyster sauce (vegan) - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Fresh Thai basil leaves - 1 cup, loosely packed
- Cooked jasmine rice - 2 cups, for serving
- Lime wedges - 2, for serving
Steps
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and chilies, sauté for about 30 seconds until fragrant.
- Add the chopped shallots and green bell pepper to the pan, stir-frying for another 2 minutes until the vegetables begin to soften.
- Increase the heat to high and add the ground chicken, breaking it apart with a spatula. Cook for 5-7 minutes until the chicken is fully cooked.
- Stir in the soy sauce and oyster sauce, mixing well to combine all the ingredients.
- Remove the pan from the heat and fold in the fresh Thai basil leaves until they are wilted.
- Serve the Pad Krapow over cooked jasmine rice and garnish with lime wedges on the side.
