Ingredients

  • Lime juice - 1 tablespoon

  • Ginger - 1 tablespoon, grated
  • Skewers - 4 (if wooden, soak in water for 30 minutes)
  • Fresh cilantro - for garnish

Steps

  1. Cut the beef sirloin into 2.5 cm cubes and place in a bowl.
  2. In a separate bowl, mix together soy sauce, fish sauce, brown sugar, lime juice, minced garlic, and grated ginger to create a marinade.
  3. Pour the marinade over the beef cubes, ensuring they are well coated. Cover and let marinate for at least 15 minutes.
  4. While the beef is marinating, prepare the coconut curry sauce by heating a saucepan over medium heat.
  5. Add the red curry paste to the saucepan and sauté for 1-2 minutes until fragrant.
  6. Pour in the coconut milk, stirring to combine, then bring to a simmer. Cook for 5 minutes and set aside.
  7. Preheat the grill or grill pan over medium-high heat.
  8. Thread the marinated beef cubes onto the skewers.
  9. Grill the skewers for about 8-10 minutes, turning occasionally until the beef is cooked to your desired doneness.
  10. Serve the grilled beef skewers with the coconut curry sauce on the side, garnished with fresh cilantro and a sprinkle of chili flakes.
