Steps
- Cut the beef sirloin into 2.5 cm cubes and place in a bowl.
- In a separate bowl, mix together soy sauce, fish sauce, brown sugar, lime juice, minced garlic, and grated ginger to create a marinade.
- Pour the marinade over the beef cubes, ensuring they are well coated. Cover and let marinate for at least 15 minutes.
- While the beef is marinating, prepare the coconut curry sauce by heating a saucepan over medium heat.
- Add the red curry paste to the saucepan and sauté for 1-2 minutes until fragrant.
- Pour in the coconut milk, stirring to combine, then bring to a simmer. Cook for 5 minutes and set aside.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated beef cubes onto the skewers.
- Grill the skewers for about 8-10 minutes, turning occasionally until the beef is cooked to your desired doneness.
- Serve the grilled beef skewers with the coconut curry sauce on the side, garnished with fresh cilantro and a sprinkle of chili flakes.
