- Rice noodles - 150 grams

- Bell pepper - 1 medium, sliced

- Broccoli florets - 100 grams
- Green onion - 2 stalks, chopped

- Ginger - 1 tablespoon, minced
- Soy sauce - 3 tablespoons
- Oyster sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Peanut butter - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced

Steps
- Soak the rice noodles in hot water for 10-15 minutes until softened, then drain and set aside.
- In a large skillet or wok, heat 2 tablespoons of cooking oil over medium-high heat.
- Add the sliced chicken breast to the skillet and season with salt and black pepper. Stir-fry for about 5-7 minutes until fully cooked and golden brown.
- Add minced garlic and ginger to the skillet, stirring for about 1 minute until fragrant.
- Add the bell pepper, carrot, and broccoli florets to the skillet, and stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and peanut butter until well combined.
- Add the drained rice noodles to the skillet, followed by the sauce mixture. Toss everything together to ensure the noodles and vegetables are well coated.
- Stir in the chopped green onions and cilantro, and squeeze the lime juice over the dish.
- Serve hot, garnished with additional cilantro if desired.
