  • Rice Noodles - 150 grams
  • Fish Balls - 200 grams
  • Chicken or Fish Broth - 500 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 cm piece, minced
  • Soy Sauce - 2 tablespoons
  • Fish Sauce - 1 tablespoon
  • Lime - 1, juiced
  • Spinach - 50 grams, fresh
  • Carrot - 1 small, julienned
  • Green Onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Chili Flakes - to taste
  • Pepper - to taste
  • Oil - 1 tablespoon

Steps

  1. In a pot, heat the oil over medium heat and sauté the minced garlic and ginger until fragrant.
  2. Pour in the chicken or fish broth and bring to a boil.
  3. Add the fish balls to the boiling broth and cook for about 5 minutes until they are heated through.
  4. In the meantime, cook the rice noodles according to package instructions, then drain and set aside.
  5. Once the fish balls are cooked, add the soy sauce, fish sauce, lime juice, julienned carrot, and spinach to the broth and simmer for another 3-5 minutes.
  6. Season with pepper and chili flakes to taste.
  7. To serve, place a portion of the cooked rice noodles in a bowl and ladle the hot soup with fish balls and vegetables over the noodles.
  8. Garnish with chopped green onions and cilantro before serving.
