Ingredients

  • Zucchini - 2 medium, spiralized
  • Beef sirloin - 250 grams, thinly sliced
  • Coconut aminos - 3 tablespoons
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Red chili - 1, thinly sliced (adjust to taste)
  • Avocado - 1 medium, sliced
  • Salt - 1/2 teaspoon, to taste
  • Pepper - 1/2 teaspoon, to taste
  • Olive oil - 1 tablespoon
  • Green onions - 2, chopped

Steps

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add minced garlic and sliced beef sirloin to the skillet, seasoning with salt and pepper.
  3. Cook the beef for about 5-7 minutes or until browned and cooked through, stirring occasionally.
  4. In a small bowl, mix together coconut aminos, lime juice, fish sauce, and sliced red chili to create the dressing.
  5. Once the beef is cooked, remove it from the skillet and set aside.
  6. In the same skillet, add the spiralized zucchini and sauté for 2-3 minutes until slightly softened.
  7. Return the cooked beef to the skillet with the zucchini and pour the dressing over the top, mixing well.
  8. Remove from heat and stir in chopped cilantro, mint, and green onions.
  9. Serve hot, topped with sliced avocado.
