- Zucchini - 2 medium, spiralized
- Beef sirloin - 250 grams, thinly sliced
- Coconut aminos - 3 tablespoons
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh cilantro - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Red chili - 1, thinly sliced (adjust to taste)
- Avocado - 1 medium, sliced
- Salt - 1/2 teaspoon, to taste
- Pepper - 1/2 teaspoon, to taste
- Olive oil - 1 tablespoon
- Green onions - 2, chopped
Steps
- Heat olive oil in a skillet over medium-high heat.
- Add minced garlic and sliced beef sirloin to the skillet, seasoning with salt and pepper.
- Cook the beef for about 5-7 minutes or until browned and cooked through, stirring occasionally.
- In a small bowl, mix together coconut aminos, lime juice, fish sauce, and sliced red chili to create the dressing.
- Once the beef is cooked, remove it from the skillet and set aside.
- In the same skillet, add the spiralized zucchini and sauté for 2-3 minutes until slightly softened.
- Return the cooked beef to the skillet with the zucchini and pour the dressing over the top, mixing well.
- Remove from heat and stir in chopped cilantro, mint, and green onions.
- Serve hot, topped with sliced avocado.
