Ingredients

  • Rice noodles - 150 grams
  • Grilled chicken breast - 200 grams, sliced
  • Fresh mint leaves - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Shallots - 2, thinly sliced
  • Cucumber - 1 small, julienned
  • Peanuts - 30 grams, crushed
  • Vegetable oil - 1 tablespoon
  • Water - 1 liter

Steps

  1. Bring 1 liter of water to a boil in a pot. Add rice noodles and cook according to package instructions until al dente, about 5-7 minutes. Drain and rinse under cold water to stop cooking.
  2. In a large mixing bowl, combine grilled chicken slices, chopped mint, chopped cilantro, lime juice, fish sauce, chili flakes, minced garlic, and sliced shallots. Toss until everything is well coated.
  3. Heat vegetable oil in a skillet over medium heat. Add the chicken mixture and sauté for 2-3 minutes until heated through.
  4. Add the cooked rice noodles to the skillet and gently toss to combine with the chicken and herbs, cooking for an additional 2 minutes.
  5. Serve the noodle bowl topped with fresh cucumber, crushed peanuts, and extra lime wedges on the side.
