- Rice noodles - 150 grams
- Grilled chicken breast - 200 grams, sliced
- Fresh mint leaves - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Chili flakes - 1 teaspoon
- Garlic - 2 cloves, minced
- Shallots - 2, thinly sliced
- Cucumber - 1 small, julienned
- Peanuts - 30 grams, crushed
- Vegetable oil - 1 tablespoon
- Water - 1 liter
Steps
- Bring 1 liter of water to a boil in a pot. Add rice noodles and cook according to package instructions until al dente, about 5-7 minutes. Drain and rinse under cold water to stop cooking.
- In a large mixing bowl, combine grilled chicken slices, chopped mint, chopped cilantro, lime juice, fish sauce, chili flakes, minced garlic, and sliced shallots. Toss until everything is well coated.
- Heat vegetable oil in a skillet over medium heat. Add the chicken mixture and sauté for 2-3 minutes until heated through.
- Add the cooked rice noodles to the skillet and gently toss to combine with the chicken and herbs, cooking for an additional 2 minutes.
- Serve the noodle bowl topped with fresh cucumber, crushed peanuts, and extra lime wedges on the side.
