Ingredients

  • Pork shoulder - 250 grams

  • Cooked jasmine rice - 100 grams
  • Shallots - 2, thinly sliced
  • Fresh cilantro - 30 grams, chopped
  • Mint leaves - 20 grams, chopped
  • Chili flakes - 1 teaspoon
  • Roasted rice powder - 2 tablespoons
  • Lettuce leaves - 4, for serving
  • Cucumber - 1, sliced for garnish

Steps

  1. Preheat the grill or a grill pan over medium-high heat.
  2. Season the pork shoulder with salt and pepper, then grill for about 15 minutes, turning occasionally, until fully cooked and slightly charred.
  3. Remove the pork from the grill and let it rest for 5 minutes before slicing it thinly.
  4. In a bowl, combine lime juice, fish sauce, and chili flakes to make the dressing.
  5. Add the sliced pork, shallots, cilantro, mint leaves, and roasted rice powder to the bowl, tossing gently to combine.
  6. Arrange the lettuce leaves on a plate and spoon the pork mixture over the top.
  7. Serve with slices of cucumber on the side and jasmine rice.
